In Italian, Portobello called "capellone" which means "big hats." Portobellos are really mature Crimini mushrooms (about 3-5 days are greater than Crimini). They have a lot of vitamins (including potassium and vitamin B), antioxidants and minerals (including selenium). They are also very rich in fiber and low in fat. While most other foods lose some of their antioxidants after cooking, Portobello retain their antioxidants, even after cooking. This recipe is for a large Portobello mushroom grilled Burger.
Preheat oven to 400 degrees. Place the portobello mushrooms on a baking sheet and brush both sides with a mixture of 2 tablespoons olive oil 1 tablespoon balsamic vinegar, then sprinkle with a pinch of salt and pepper. Roast in oven at 400 degrees for 30 minutes.
While the mushrooms are roasting, mix 4 tablespoons olive oil 2 cloves minced garlic, 1 teaspoon crushed red pepper, ½ teaspoon salt and 1 / 8 teaspoon black pepper. Beat until blended, then set aside. You brush this mixture on bread or bread when ready to serve.
Finally, it is time to make tomato basil. In a food processor, place all ingredients: 3 medium ripe tomatoes, chopped 2 tablespoons red wine vinegar, 1 tablespoon of real lemon juice, 4 cloves crushed garlic, 4 tablespoons chopped fresh basil, ¼ teaspoon of sea salt and a 1 / 8 teaspoon pepper. Now mix all these ingredients until smooth. If not using immediately, place in refrigerator until ready to serve.
When Portobello mushrooms are roasted, remove from oven. You can serve this in any kind of bread, including hamburger buns, whole grain breads, rustic breads, whatever your preference. Take two slices of bread or two halves of a bun, brush with olive oil mixture. Then place a spoonful of tomato and basil dressing on the top piece of bread. Place a mushroom on the bottom piece of bread. Top of the mushroom with lettuce, onion, tomato slices, or whatever you like on their burgers.
A variation of this recipe includes roasted red peppers, Portobello mushrooms with roasted peppers and place on top of the fungus in the sandwich. You could also substitute other roasted vegetables and / or a slice of their favorite type of cheese.
